There is a certain kind of hunger that arrives mid-afternoon. A little nudge from the belly that says now is a good time to take a break and indulge in something warm.

That’s when the pizza at Caviar Bistro comes to mind. Thin and baked crisp, nine or twelve inches depending on the kind of appetite you’re entertaining.

The chicken BBQ pizza is rich and bold. Grilled chicken layered over our house barbecue sauce, smoky and sweet. The kind of flavour that stays with you after the last bite.

Margherita is for the purists. Tomato. Mozzarella. Basil. A simple trio kissed by olive oil and heat. It is light and lovely and always just right.

Pepperoni for those who want something familiar. It is the classic that never needs convincing. Crisped edges and melty cheese. Comfort in a slice.

And then there is the prosciutto arugula. A pleasant saltiness from the cured meat, crisp spice and bitterness from the greens, and Italian cheeses that bring it all together. Sophisticated but not serious.

Pair with a glass of red or white wine or something fizzy. Sit outside if the sun is still kind. Share a few slices or keep it all to yourself. There are no rules here, only the pleasure of pizza and the beauty of eating slowly in a place that lets you be. Enjoy!
